Favorite Plant-Strong COOKBOOKS!! :-)

Ok! Since becoming a vegan I have relied on outstanding plant-strong bloggers heavily for their excellent recipes but I also have continued to use cookbooks as well.  Next time I'll discuss my go-to recipe blogs & who my favorite bloggers are and why (for a sample you can check the left sidebar of the blog for links!), but for today, lets talk cookbooks!


When planning our weekly food plan I tend to pick one cookbook to focus primarily on & then add in recipes from blogs as well.  Getting used to cooking so frequently was definitely an adjustment but since we really can't find anything to eat at work, I really rely on my homemade food to get through the day!  The thing I have discovered is that in the 20 mins it takes to get take-out and get back home you can have dinner practically ready to eat in that same timeframe AND know what is in the food you are eating!  (even less if all you are doing is heating up food from a weekend bulk cook).

For now, I definitely have a set of favorite vegan cookbooks and I'll share them with you in this post.  Do you have a favorite that isn't on my list??  Would LOVE to hear of ideas for new awesome ones!



Favorite Cookbooks:

1) The Happy Herbivore Cookbook by Lindsay Nixon.  If there was one cookbook I could recommend as a starter for plant-based eating, this would be it. 
2) Vegan on the Cheap by Robin Robertson:  My second favorite is a highly awesome book for those (like us) on a tight budget! 
  • every recipe is <$2.50 a serving with a lot around the $0.50/serving range.  
  • she helps you figure out how to replicate the more expensive vegan items with homemade versions--seitan, vegetable stock, mayo, "big stick pepperoni."  AND how to organize your kitchen.
  • if you are going oil-free per Dr. Esselstyn's program (like me) you do need to substitute for oil 
  • Sweet-Potato, Roasted Tomato,
    Spinach & Peanut Soup!

  • the food is fantastic--Robin Robertson is an amazing chef--The Healthy Librarian's version of her Sweet Potato, Spinach, Fire-Roasted Tomatoes, and a Bit of Peanut Butter Soup is one of our favorites (that recipe is from a different one of her cookbooks but all of her recipes are of this quality)
  • Brilliant new cookbook added to my collection this week
  • First recipe, the potato soup, was very good
  • Fascinating to discover that you can cook things like squash and poached pears in the slow cooker!
  • LOVE our 3-in-1 slow cooker so I'm going to be all about this book!
  • Its organized really well--love that it clearly identifies the recipes as soy and gluten-free, etc 
  • I like its "The night before" and "In the morning" sections to each recipe so you can prep it the night before and then toss it in the slow cooker in the morning to cook all day!  

  • The cookbook from the Forks Over Knives film
  • Really excellent variety of plant-based options to choose from, 125 recipes from 25 vegan chefs including Mrs. McDougall, Mrs. Esselstyn, Mrs. Campbell, Chef AJ, Rip Esselstyn and many more.  
  • Great for new fresh ideas when you are getting in a rut!
  • Need to substitute for oil in some recipes but a lot of recipes without oil as well.
  • Favorite:  Polenta Pizza with Herbed Cashew Creme! (made that for Christmas for my family & they loved it!) YUM!

  • New favorite--got it this week and have made 2 recipes so far.  Both have been OUTSTANDING!
  • I love this book because it has a bunch of full menu ideas for a party and then is organized into recipes by party theme.  The recipes sound complicated but I can follow them easily (I don't do complicated recipes! No time!)
  •  For example, the first chapter is "A Dinner Party" and the recipes are:  "Artichoke Tapenade, Sun-dried Tomato & Green Olive Biscotti (made this tonight--with gluten-free flour of course--OUT OF THIS WORLD AMAZING!), Butterhead & Radicchio Salad with Walnut-Pesto Dressing, Wild Mushroom Ragu over Polenta and Orange-Kissed Chocolate Tiramisu!!"
  • The themes range from a "Child's Birthday Party" menu to a "Super Bowl Party" with some formal menus as well (the formal menus do seem more complex however)!
  • The recipes are very straightforward--easy to throw together.  When I saw the word "biscotti" I was a bit intimidated but it was actually pretty simple to prepare!  She clearly indicates if something is complicated or simple.
  • You do need to find substitutes for oils and fats in the recipes 
  • I'm a huge fan of "party food" so its nice to have a book to use.  Her "Finger-Lickin Tempeh" recipe is online--also see my post.

  • Whimsical and fun--great variety of fantastic ethnic food, a lot of curries which is great!  We cook the curries in the slow cooker which saves time :-)
  • Nutritional info with every recipe, no more than 400 calories per serving
  • Main dish focussed which is nice, less emphasis on appetizers, etc.  
  • Excellent variety of vegetable options and recipes are healthy
  • New to me so I'm still getting to know it--did a lot of last week's menu from it:  the Butternut Coconut Rice was AMAZING and the Vegetable Korma is a total hit!

Reference Books with Recipes
  • The first cookbook we used--fantastic simple recipes and great tips on learning how to cook without oil (surprisingly not as challenging as you would think!).  
  • Favorites:  Artichoke-Bean Dip (a hit at every party I've brought it to--I use it also as sandwich filler), Green Onion Hummus, Quick Black Bean Chili (but we make it with multiple types of beans)--SO good!
  • Excellent for beginners to the vegan, low-fat world because everything is very easy with very short, simple steps to prepare.

  • I use this book primarily for the reference data in the front but there are some good looking recipes in the back--haven't tried them yet.  
  • The table at the front is the basis for my anti-inflammatory food program

    Favorite Movies That Inspire Me to Stay Plant-Strong!:-)

    Ok, by popular demand I'm going to do a few posts with my favorite movies, cookbooks, books & blogs that inspire me to stay plant-strong!!  First, movies :-)

    Great movies I can recommend that capture the power of the plant-based diet:
    Forks Over Knives:  amazing, amazing amazing.  I love this movie and it was one of the main motivating factors to get my husband and I on the vegan diet train.  The science in it is solid, it is really entertaining and very inspiring.  

    For me the most powerful part is watching two doctors in LA practice with a "food as medicine" principal where they teach patients how to eat and get them off their pharmaceutical medications!  This movie is a great introduction to the plant-based concepts & features luminaries in the field (Esselstyn, Campbell, McDougall, Barnard) as well.  Netflix it!  We bought it because as my husband says--in the first month we needed motivation to stay on track so we watched it over and over again! :-)
    Other great movies:

    Fat Sick & Nearly Dead--fantastic--saw it with my husband this week and it has really inspired him.  At first I was worried it was essentially a juicer commercial but they feature Dr. Joel Fuhrman in it and he is someone I really respect.  By the end I totally bought onto the idea that juicing can be a way (for only a brief time, only if medically supervised & only if used as a transition to 100% plant-based eating) for people to reset their taste buds to veggie based eating!  Otherwise, I really don't think it is clinically safe.  The Healthy Librarian has comments on this movie here.

    Processed People:  I liked this as well, just not as much as the previous two films.  Its more dry and less entertaining as the previous films but the content is interesting.  I know this sounds strange but I was struck while watching it that nearly all of the brilliant doctors and researchers  they interviewed were men (there is one woman)! Not that it really matters--the content is excellent--I just was so surprised by that for some reason! 

    Food Inc:  Brilliant film and I think its very balanced politically.  Watched it awhile ago but still really had an impact on me.  For me the most powerful scene was when they diagrammed out our usual grocery store and demonstrated how false the "variety" of products was--in actuality the majority of the products are produced by only a few major food corporations.  I also liked how they ended the film on a high note--basically saying that if we as consumers demand it by our buying habits, the large corporate food producers will have to change how they operate.  

    SuperSize Me:  Ok this I think you probably all have seen.  So powerful, so entertaining.  The part that had the most impact on me was the focus on what the federal school lunch programs are feeding our kids and how the cafeterias don't cook anymore!  The scene where the little girl basically has chips for lunch is so disturbing.  I think we need to really address this because the childhood obesity epidemic is not being taken seriously enough I believe AND kids have a lot more behavioral issues (ADHD, etc) that I believe can be traced directly to food.  I really enjoyed when they feature a school providing the kids with local, freshly made food.  The behavioral difference in the kids is pretty incredible.

    RECIPES: My Own Potato-Leek Soup! :-)

    Ok so I'm a bit nervous about this post because I really don't have a super amount of confidence in my own vegan cooking skills & I've never written a recipe before but....I'm going to take a courageous leap!!  I won't do this often (remember, I'm a doctor NOT a chef!) but here is my recipe for my very own Potato-Leek Soup :-) (a version of Ann Esselstyn's Potato Soup from Prevent & Reverse Heart Disease):

    Potato-Leek Soup (reminds me of the potato leek soup made by my Mom when I was little! It tastes like POTATOES and NOT cream!)
    Makes 4-6 servings
    i
    1 pound potatoes--Yukon Gold and Red Russet are best
    1 Leek
    1 cup Oat Milk
    1/4-1 cup water
    1-2 Tbl dry Dill
    salt and pepper to taste

    1.  Wash the potatoes and leave the skins on.  Chop them up and put them in a big pot.  Fill the pot with water up until the potatoes are just floating off the bottom of the pot.  Boil the potatoes until the potatoes can be easily mashed in with a fork--usually about 20 mins.  
    2.  While the potatoes are boiling, cut the bottom off the leek and thoroughly wash all the leek fronds.  Chop each frond into approximately ¼-1/2 inch pieces.
    3.  Place the fronds in a frying pan and sauté in about 3 Tbl water (or vegetable broth) until the pieces are soft and brown-tinged. Add more water (or vegetable broth) as needed to maintain the sauté.
    4.  Once the potatoes are done, drain off the water
    5.   Put the cooked potatoes, the sauteed leeks (including the leeks’ sautéing water/broth) and 1/4 cup of water in a food processor and puree.  While pureeing add the cup of Oat milk, 1Tbl Dill and the salt & pepper.  If the soup is too chunky for your taste, thin it with more water.  Feel free to use more oat milk to increase creaminess or more dill (I use a LOT more dill because I LOVE dill)!
    6.  Either transfer the now pureed soup back into a pot to heat up OR if it is still warm enough--serve directly from the food processor!


    Ok!  Hope it turns out yummy for you too!  My husband loves it so its a winner in my book :-)

    She lost 60lbs, Got Her Health Back and Is Grateful for Her Doctor for Saving Her & Her Husband's Life by Recommending a Plant-Based Diet!! The Holiday Happiness Marathon Continues!


    The HOLIDAY HAPPINESS MARATHON Continues!!!!! 
    Welcome All My Guest Bloggers--Doctors, Nurses & Patients whose stories warm our hearts....Here is Another Wonderful Patient Story!


    I've been thin most of my life but about 10 years ago, I started putting on weight due to a bad knee.  I couldn't exercise enough to keep the weight down.  About 5 years ago, I underwent a total knee replacement which didn't go as well as I had hoped.  Again, I couldn't do any extensive exercise other than work on my range of motion.


    About a year ago, I was in such shape that I became hysterical if I saw myself in a mirror and I certainly didn't go shopping for clothes - it was too traumatic. 


    I finally visited my doctor who told me that my only hope was to go on a plant-based diet for the rest of my life.  He explained what it was and even loaned me a book about it (The China Study).  I purchased Dr. Caldwell Esselstyn's book, "How To Prevent and Reverse Heart Disease" and off I went. 


    I tossed out everything that wasn't part of my new Vegan lifestyle because if it was there, I knew I'd weaken.  After about 4 months, I noted that my clothes were loose so I weighed myself - I had lost 60 lbs.  I felt great with renewed energy and was able to look in the mirror again without going into a depression.  I will always thank my doctor, Dr. Don Wagner, for saving my life.


    Now, fast forward to July of this year.... my husband was involved in a terrible motorcycle accident that should have killed him, both by statistics and by actual injuries. He was rushed to the Head Trauma and Burn Center in Las Vegas and was in the hospital from the Saturday morning it happened until Thursday when he came home with home nursing teaching me to change his dressings.  


    We attribute his ability to heal so fast to our plant-based diet (& prayer) - there is no other answer.  It just reinforced our determination to adhere to our plant-based diet and, again, we thank Dr. Wagner for his insistence on getting us started on the right path.

    Friday's Best of the Blogosphere From the Last Week!! Breast Cancer, Steve Jobs & Pizza is a Vegetable?? Plus: Recipe of the Week!

    Wow there have been some extremely interesting posts on the blogs this week!! 

    Here's a roundup of my favorites:  (click on the links to read the posts yourself!)
    1)  Fighting Breast Cancer with Flaxseeds (From "Disease Proof"--Dr. Barnard's blog) Really interesting piece about breast cancer prevention--very medical but fascinating.
    2)  Why Did Steve Jobs Die? (Dr. McDougall's Newsletter) Ok this piece was a bit of a shocker.  Dr. McDougall's premise is that Steve Jobs had cancer since early adulthood and the vegan diet helped delay its onset.  This seems like an incredible leap until you follow through Dr. McDougall's calculations of tumor production intervals and the track of Jobs medical treatments.  What a read!  I'm still pondering on it!
    3)  Congress Declares Pizza a VEGETABLE??? (Healthy Girl's Kitchen) Ok, in case you missed it, our legislative representatives actually are actively choosing to reduce the health of our kids in favor of the food lobby! This has been going on for awhile but this latest move is SO unbelievably ridiculous that Saturday Night Live had to get in on the act!  Pizza as a vegetable.  Are you kidding me?  I already knew that they classified "fries" as a vegetable, but pizza?? To be perfectly accurate the debate wasn't about pizza actually--it was about whether the tomato paste that GOES ON pizza can be counted as a vegetable!! To me, that doesn't sound a whole lot better.  Sometimes I wonder.  And so does SNL.  This video that the Healthy Girl posted on her blog is hilarious.
    4)  From Dr. Esselstyn's Facebook Page:  Newly released:  Dr. Esselstyn's Heart Disease Reversal Program on VIDEO!!  Just in time for the holidays its a stocking stuffer that can save a life!  His whole program in a four hour video!  Dr. E is amazing.

    RECIPES: What the Happy Nurse & I Are Eating THIS Week!:-)

    The Healthy Librarian's version of Robin Robertson's
    Sweet Potato-Spinach-Roasted Tomato-Peanut Soup
    This week is going to be particularly awesome because we will have food in the house!! Between work on the Spinal Cord Injury unit and visiting my dear family member every night at the hospital, the last two weeks have been a lot of eating take-out.  If I see the name Pei Wei again I think I actually might be ill!  


    Anyways, thanks to a four day weekend I've had some time to plan to do a little cooking!  This is pretty much the FIRST Thankgiving in YEARS that I haven't been working!!!  Hooray!!  Of course my hubby, the Happy Nurse, did work Thanksgiving but he has this weekend off too so yay!!  And, best news ever, my family member is out of the hospital and tucked in at home in good health & spirits :-)


    So this week we'll be eating (and I'm planning for us to cook enough for the next 2-3 weeks so thats why there is a multitude!):  
     Barley Soup, TJ's 17 Bean & Barley Soup & Aztec Corn Soup
    in our NEW 3-in-1 Slow Cooker!!


    Soups [all freeze well, and with our NEW 3-in-1 slow cooker (only $35 at Walmart!), SO easy to make multiple soups at the same time!!]


    1)  The Healthy Librarian's version of Robin Robertson's Sweet Potato, Spinach, Fire-Roasted Tomatoes, and a Bit of Peanut Butter Soup
    2)  The Happy Herbivore's Aztec Corn Soup from The Happy Herbivore Cookbook
    3)  17 Bean & Barley Soup with dried beans mix from Trader Joe's (Recipe on the package & on a website I found via Google!)
    4) Barley Soup (my own basic recipe--vegetable broth, barley, garlic, oregano, basil, salt & pepper)


    Sandwich fillers & Sandwiches:
    1) Curried Bean Dip from Susan O'Brien's Cookbook: The Gluten-Free Vegan
    2) Artichoke-Bean Dip from Ann Esselstyn (Prevent & Reverse Heart Disease)
    3) Kale & Lemon Sandwiches by Ann Esselstyn on The Healthy Librarian


    Main Courses:
    1) Enlighted Big Vegn's Creamy Triple Mushroom Fettucine (without the gluten Seitan)
    2) Steak & Pepper Fajitas (The Happy Herbivore Cookbook)
    3)  Tempeh Joes (The Happy Herbivore Cookbook)
    4)  Hawaiian Chickpea Teriyaki (The Happy Herbivore Cookbook)
    5)  Portobello Steaks (The Happy Herbivore Cookbook)


    Sides:
    1) Mashed Potatoes (potatoes, oak milk, salt & pepper)

    I've fallen in LOVE with my NEW Happy Herbivore Cookbook!!!

    Ok so if you can't tell by my posts so far, I'm just a little bit of an enthusiastic person! :-)  My patients like it--some of them find it a bit amusing (particularly my geriatric patients)--but so much of medicine is coaching so I think this character trait helps me do my job well.  


    That said, prepare yourself for a massive flow of enthusiastic energy because I just got Lindsay Nixon's cookbook, "The Happy Herbivore Cookbook," from Amazon yesterday & it is probably one of the most useful, simple & well-organized cookbooks I've ever seen or owned.  My husband, The Happy Nurse, & I sat on the couch last night flipping through it & we both found so many recipes that we love (and look super easy).  The section in the beginning about what to stock your pantry with & how to substitute for fat in recipes is worth the $11 it cost us!  Since we've already tried her recipes from her blog before, we know that her creations are yummy so we can't wait to start tag-team cooking these!


    I realize that you all may become a little Happy Herviore-ed out after reading my next post on a Sample Bulk Cook using The Happy Herbivore's blog recipes--but I couldn't stop myself from writing about this cookbook because I'm so impressed.  From a health standpoint, you couldn't do any better (nutritional info on EVERY recipe is listed!)


    The other cookbook I love that is in the same league with this one is Vegan on the Cheap (hellloooo I'm a doctor--I'm drowning in student loan debt!) but the only issue with Robin Robertson's cookbook is that I do have to do a lot of modifications substituting out oil so since "The Happy Herbivore Cookbook is nearly totally oil-free--I'm in food planning HEAVEN!  Combining Robin's money saving tips with Lindsey's recipes--awesome.


    Now three months into the Esselstyn program (on top of seven months of Gluten-free, Sugar-free, Anti-Inflammatory food choices on my part), we have to admit that we've been getting a bit tired of recycling the recipes from Dr. Esselstyn's book & the Forks Over Knives Cookbook.  We need more variety--so to have an ENTIRE cookbook of yummy Vegan, No-fat/Low-fat recipes to supplement our recipes from other favorite bloggers (Fat Free VeganHealthy Girl's KitchenVegan PlanetThe Healthy Librarian) is just SUCH a bonus!  


    This is not to say that Ann Esselstyn & the Forks Over Knives recipes aren't fantastic--they are absolutely delicious & we've been happily eating them--but after recycling the recipes over and over again, you do get a bit tired of the same thing!  And my husband doesn't like a bunch of things--like onions--so that eliminates a bunch of the Esselstyn recipes as options!:-(


    So I'm going to strongly encourage all of you to pop over to Amazon (my favorite method of book buying) & spend $11 on this cookbook (The Happy Herbivore Cookbook).  Her new cookbook "The Everyday Happy Herbivore" comes out December 6--so that is something to look forward to as well!
